Spanish Rice

This is my version of Spanish rice. Growing up in East Tennessee, Spanish rice was a staple in our house. My mother was of Spanish descent and had to cook for a passel of kids. She didn’t have access to all the ingredients available for me today, but I remember the taste being satisfying. Even though I still make Mom’s version I like taking advantage of the affordable ingredients available for my version. Those that have tried it seem to like the taste.
