Cow Patty Mushroom with Down Home Fried Rice

A large portabello mushroom turned up side down, filled with ABC sauce, topped with Gouda cheese, and (in this case) cooked in an air fryer. Set on a bed of Down-Home fried rice consisting of sauteed pepper mix, crispy turkey bacon bits, turmeric yellowed rice, and scrambled eggs. It make a delightful, healthy lunch or evening meal.

Ingredients
  

  • 1 Portabello Mushroom large
  • 2 Pinch of pink salt One for each side
  • 2 Pinch of black pepper One for each side
  • 1 tbsp ABC sauce Sweet soy, thick sauce
  • 1 Slice of Gouda cheese Or your choice
  • 1 cup Pepper mix See recipes for pepper mix
  • ¼ cup Turkey bacon bits Slightly crisp
  • ½ cup rice Cooked with Turmeric for yellow color
  • 1 tbsp Olive oil
  • 2 eggs
  • ¼ cup Red beans

Instructions
 

  • Brush or spray top of mushroom with olive oil. Sprinkle salt and pepper.
  • Place in air fryer and cook for 5 minutes.
  • Turn mushroom over, spray or brush with olive oil, sprinkle salt and pepper. pour ABC sauce around stem filling up the soft interior. Cook for 10 minutes.
  • Place Gouda cheese around stem and cover mushroom. Cook until cheese melts.
  • Scramble the eggs and set aside.
  • Put the rest of the olive oil in a medium fry skillet and heat. Add pepper mix, rice, bacon, red beans, and pepper mix. Heat until ready to serve. Add scrambled eggs and stir to mix together.
  • Pour the skillet contents into a shallow, wide bowl. Place the Portabello mushroom on top and in the center.
  • Enjoy.
